Japanese knives are made using technologies developed over centuries in the production of katana, wakizashi, and tanto (samurai swords). After the United States occupied Japan after the end of World War II, General MacArthur banned the production and possession of Japan's traditional swords. This ban forced a large number of highly skilled craftsmen to dedicate their skills to the production of kitchen knives and blades. Although the ban was lifted several years later, the Japanese government still limits production to a few pieces per year. Nevertheless, 1200 years later, the legacy and unparalleled sharpness of the katana remain at the heart of the kitchen.
